Das Goldstein by Gollner’s in the Goldsteintal near Wiesbaden – historic hospitality, stylish ambience and special moments in a listed heritage building

In the Goldsteintal north of Wiesbaden, Das Goldstein by Gollner’s is located in a listed building with a long history. Originally, the house served as a shooting lodge and countryside restaurant. For many years, it was a popular meeting place outside the city.

After a period of vacancy, the building was extensively renovated. The historic façade with its defining elements was preserved, while the interiors were fully renewed both technically and aesthetically. Under the direction of Günter Gollner, an upscale restaurant with international cuisine and a clear focus on a sophisticated wine list was created here.

From supply cellar to professional wine storage

A central part of the concept was the redesign of the historic brick vaulted cellar. For decades, the space had been used as a storage and supply cellar. The structural conditions were demanding: gravel floor, technical installations, static requirements and an unstructured room layout.

The goal was to create a professional storage solution for more than 8,000 bottles – including numerous Magnum, Double Magnum and Jeroboam formats. In addition to optimal storage conditions, accessibility, clarity and an attractive presentation for guests also had to be ensured.

Structural preparation

Before the shelving systems were installed, several measures were implemented:

  • Structuring the entire cellar according to its various functions
  • Adapting service rooms and organizing technical lines
  • Rebuilding the floor with concrete foundations beneath the racks

This provided the basis for implementing the concept for wine storage, wine presentation and tasting.

Black PURE – clear structure in the vaulted cellar

For the interior, restaurant owner Günther Gollner chose the Black PURE series by Weinregal-Profi. The black metal racks offer high load capacity, clean lines and excellent value for money.

The racks structure the vaulted axes and make efficient use of the room height. Wall and row racks organize the stocks systematically without concealing the historic substance. The black metal creates a restrained contrast with the red vaulted bricks.

Large formats such as Magnum, Double Magnum and Jeroboam were integrated using special holders. This ensures that these bottle formats are stored safely while remaining easily accessible.

Result

The former extremely damp cellar was transformed into a professionally organized wine storage area with a clear structure. It meets the requirements for capacity, stability and clarity while fitting into the listed historic environment.

Today, the cellar supports the restaurant’s gastronomic concept and provides the foundation for an extensive, carefully stored wine selection.
